My wife and I came up with this recently and really like it. We had this Flax seed pizza crust which comes in packs of two but never was able to hold up as a pizza crust. However, we wanted to try Quesadillas which worked out great.
We got this pizza crust off of Amazon, but you just need to thin pizza crusts. This one only has some oil and aside from that follows the Whole Food, Plant Based limits:
- Flatzza Pizza Crust (Or similar type)
- Chao Vegan Cheese Slices (Or Shredded Vegan Cheese)
- Can of Black Beans
- Can of Corn
- Can of Rotel or Rotel Substitute
- Pictsweet Seasoning Blend
This is it! There is really not much to this. Easy ingredients to find. This will make a lot more vegetables than you need, so you can save the rest and put it on a salad the next day. So step on is to put the Pictsweet seasoning blend ion a wok and cook it. No need to drain until we are done with everything.
Add your Rotel, Corn and Black beans and let cook for about 10-15 minutes at medium heat. Once you get it cooked you can drain the whole mixture in a colander, then you can put it back in the wok and use Chili Pepper and Cumin to season the mix and let it cook a bit more. It is somewhat dry at this point so you should reduce the heat to 3-4. While that is simmering, I spread the cheese across the bottom crust. In retrospect, when I do this again I would put the cheese on top instead.
Once you spread the mixture across the top of the crust in an even, single layer, you can put the other layer on top:
Put in the Oven for 12-15 minutes @ 400 degrees. Cut it like a pizza and Enjoy!
In retrospect, like I mentioned before, I would have put the cheese on top to hold the ingredients together better. Once I make this again I will update the post. However, it was delicious. It was messy, but delicious.

- Use vegan shredded cheese instead of sliced cheese
